Mom's Dishpan Cookies

My buddy the Frugal Hostess asked a while back about a healthy chocolate chip cookie recipe.  These can't exactly be called health food, but the addition of oats, nuts, and coconut definitely give you some fiber and great healthy fats your body needs.

My mom has been hiding this recipe from me, but  I forgave her after I ate one.  This is a really versatile cookie recipe that you can make any way you want.

2 c. sugar
2 c. vegetable oil
4 eggs
2 c. packed light brown sugar
2 teaspoons vanilla
4 c. all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
1 1/2 c. oats
1 c. chopped nuts (pecans and walnuts are great)
2 c. coconut (optional)
4 c. corn flakes
2 c. chips (semi-sweet chocolate, milk chocolate, peanut butter, butterscotch, or a mixture)

Mix the first five ingredients together in a mixer.  Sift the flour, salt, and baking soda together and add to the mixer.  Mix in whatever other ingredients you choose until just blended.  Drop onto greased cookie sheets and bake at 350°F for 10-12 minutes until browned.  They will stay chewy and soft.
