Greek-Style Scampi and Broiled Heirloom Tomatoes

If you want a quick, easy seafood dish, then this is the dish for you.  The whole recipe cooks in the time it takes to boil the pasta: less than 30 minutes, prep and all!  If you tried the Shrimp Fra Diavolo from last month, this is similar but with a lighter sauce.  I added a few marinated black olives and left off the red pepper flake until plating.  The contrast of flavors was great.  The subtle tomato marries well with the briny feta and olives.


It also paired perfectly with my Broiled Heirloom Tomatoes.  This is a simple way to use all those wonderful tomatoes coming out of the garden.  You top thick tomato slices with a simple mixture of bread crumbs, cheese, seasonings, and a little olive oil and pop them under the broiler until golden brown.  I used Cherokee Purple, Lemon Boy, and Green Zebra tomatoes.  If you haven't tried them, they are amazing!  The Cherokee is meaty, the Lemon Boy is sweet, and the Zebra is tangy.  You get a whole sampling of flavors on one plate.

Here is the calorie count for the Scampi using Barilla Plus Angel Hair pasta, reduced-fat feta cheese, and not including olives:
