Quick Zucchini Pancakes

These quick little fritters are guaranteed to get the kids to eat their veggies.  It is so simple.  Shred some zucchini, add a couple of ingredients, and give them a quick pan-fry.  After a little research I discovered that pan-frying is actually a great way to get that great fried food taste with minimal additional calories.  Check out this great post about Pan-Frying on FoodReference.com.  These pancakes are only about 100 calories each, minus the added oil.  If cooked properly, that should probably be less than a 1/4 teaspoon.  See the recipe link for the complete calorie count.

I paired these with the leftover Lemon Rosemary Chicken and some fresh green beans from the garden.  What a terrific and stress-less dinner.
